Simple Spinach and Red Bell Pepper Pasta

Ingredients

  • 2 cups uncooked penne pasta
  • 1/2 medium Onion chopped
  • 3 cloves Garlic minced, more or less to taste
  • 2 tablespoons olive oil
  • 1 teaspoon basil or 2 tablespoons fresh, chopped)
  • 1 medium Red bell pepper or yellow or green pepper, cut into strips
  • 10 ounces Fresh spinach coarsely chopped
  • 1 teaspoon Salt or to taste
  • Freshly ground pepper to taste
  • Freshly grated parmesan cheese to taste (optional)

Preparation

Cook the pasta and drain.

Heat the oil over medium high heat, and cook the onion, garlic and basil until the onion is tender.

Add the pepper strips and cook for 3 minutes longer.

Stir in the spinach. Heat for another minute, until warmed through.

Toss with the pasta, and add salt and pepper.

Top with parmesan cheese (leave out for vegan version).

Simple and very tasty. We enjoyed the freshness and flavor. We did add just a small dab of sun dried tomatoes for a little extra zip

This was very easy to make, but it had practically no flavor. If I make this again, I would add either more garlic and onion, or maybe some red wine vinegar.

This is vegan ONLY IF the optional Parmesan cheese is omitted or replaced with a non-dairy alternative.

This was very good and I like the easy part! The meal can be made quickly on a week night. I didn't believe that the recipe could be right for all that spinich but then I found that it cooked down and could use the full 10 ounces (one pre-packaged bag). This meal could use a little more flavor. Thanks for sharing your recipe! I will definitely make this again.

I really enjoyed the ease of making this dish. The serving portion was just the right amount for a single bachelor like myself. Tonight I had it for dinner and I have just enough for a great lunch tomorrow. My added touch: I pan fried and placed a piece of boneless chicken breast on the top of this pasta. It was deliciously tasteful.
