"perfectly Chocolate" Chocolate Cake and Frosting

This is based on a recipe from the Hershey's Cocoa box and it's a great chocolate cake recipe! This is "health food" because cocoa contains antioxidants! :)

Ingredients

Preparation

Cake:

Preheat oven to 350 degrees and spray two 9 inch round baking pans with non stick cooking spray. Combine first 6 dry ingredients in a large mixing bowl. Add eggs, milk, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the hot coffee and mix well with a spoon (batter will be thin). Pour batter into pans and bake for 30-35 minutes or until wooden toothpick inserted into the center comes out clean. Cool 10 minutes and then remove from pans to wire racks. Cool completely before frosting.

Frosting:

Melt the butter and stir in the cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistancy. Add more milk, if needed. Stir in vanilla.

I have just made this a second time. Living in Australia we don't have Hershey's available here so I substituted for another Cocoa brand and it is still great.

I made this for my hubby's birthday and he loved it (he's a chocolate cake fiend) as did everyone else. I used Hershey's dark cocoa powder, as his preference dictates the darker the chocolate the better. The cake and frosting were almost black because of this - beautiful and tasty!

I don't really like chocolate cake but I made this for my husbands birthday and it was very good.

My grandmother used to make this cake and I adored it! I am happy to have found her (Hershey's) recipe and will try it soon. Adding coffee to chocolate always increases the overall chocolate flavor without actually making something taste like coffee. It's a great trick when baking anything chocolate!
