Cassata (sicilian Cream Cake By Vincent Ruisi) Ingredients

2 pounds Ricotta Cheese 4 tablespoons Mixed candied fruit chopped
1 1/2 cups Sugar 1 Sponge cake cut into 1 inch slices
1/2 teaspoon Vanilla 1 8 inch spring mold pan
1 ounce Any favorite white liqueur Confectioners Sugar
2 tablespoons Sweet chocolate shredded

Instructions for Cassata (sicilian Cream Cake By Vincent Ruisi)

* Combine ricotta, sugar, vanilla and liqueur in a bowl and mix well with a wooden spoon until smooth and fluffy.
* Add chocolate, fruit and mix well.
* Line the bottom and sides of the spring mold pan with slices of sponge cake.
* Cover with plastic wrap and refrigerate overnight.
* Remove from the spring mold rim and place cassata and bottom tin on a serving plate.
* Sprinkle with confectioners sugar and serve.
