Bring the broth to a boil in a large saucepan. Add mushrooms, bamboo shoots, water chestnuts and ginger. Simmer 10 minutes. Add tofu soy, rice wine vinegar, noodles and spinach. Bring to serving temperature. Remove from heat and stir in oils.
