Mother's Cold Zucchini Soup Ingredients
3 cups
Zucchini
cubed (with peel)
3 tablespoons Farina
1/4 cup
Scallion
s or shallots diced
1/2 teaspoon
Dill
weed dried
2 tablespoons
Butter
Salt
to taste
1 teaspoon Wine
vinegar
Pepper
to taste
4 cups
Chicken broth
1/2 cup
Sour cream
or yogurt low-fat or non-fat
Instructions for Mother's Cold Zucchini Soup
Melt butter in sauce pan. Stir in shallots...cook slowly for one minute.
Add zucchini, broth, vinegar, and dill and bring to a boil. Stir in farina. Simmer 20 minutes.
Let cool slightly, then puree in blender with sour cream, salt, and pepper.
Chill and enjoy
