Easy Frito Pies Ingredients

1 can (12 oz) Chili, no beans - or homemade 1 cup Cheese, shredded - cheddar, jack, or colby
4 cups Corn chips - regular size (not scoops)1 medium Tomato - diced fine
2 medium Green Onions - diced fine1/2 cup Sour cream

Instructions for Easy Frito Pies

Heat the chili. Place condiments in small bowls. Put corn chips in bottom of a bowl, pour some chili over chips. Add onion, cheese, tomato, etc. Enjoy.

For a fun party presentation, get small bags of chips and serve in the bag. Each person adds whatever they want into the bag and eats from the bag. Cleanup involves tossing out the bag and plastic spoon.

For a diabetic-friendly treat, use corn & soy chips. They don't seem to spike my sugar as much as regular corn chips.

Ingredient Insight - look inside this recipe

We tried these out on a recent camping trip because my BoyScout is looking for a lunch he can prepare for his patrol this fall to earn an advancement. This will definately be on the menu!

I actually saved a few empty chip bags when I got them at lunch and filled them from a larger bag at home. The presentation was well received at a party. [I posted this recipe.]
