Turkey Bacon and Vegetable Saute Ingredients

1 Head Broccoli cut in pieces1 can (16 oz) Tomato (diced with italian spices)
1 ea Zucchini cubed1 teaspoon Salt
2 small Crookneck squash cubed2 teaspoons Italian spices
4 slices Turkey bacon chopped1 tablespoon Olive oil
6 cloves Garlic minced1 bunch Scallion chopped
10 Olives (green with pimentos) chopped3 cups Pasta (whole wheat) cooked
2 Marinated artichoke hearts chopped3 tablespoons Parmesan grated
1 can (8 oz) Garbanzo beans 1/4 teaspoon Pepper crushed

Instructions for Turkey Bacon and Vegetable Saute

Put olive oil in a large saute pan. When it gets hot, add garlic and stir until aromatic. Add turkey bacon and scallions and cook aprox. 2 minutes. Add broccoli, zucchini, and crookneck squash, and stir fry until broccoli is bright green. Add olives, artichoke hearts, tomatoes and garbanzo beans. Sprinkle on italian spices, salt and pepper. Cover and simmer aprox. 10 minutes. Serve over whole wheat pasta, and sprinkle with parmesan cheese.
