100% would make this recipe for Chicken Enchiladas again.

I got this recipe from e-mealz, and it's quicky become one of my favorite things to cook!! Since only 2 of us eat this, I usually have leftovers for serveral days.

Chicken Enchiladas Ingredients

1 can (16 oz) Refried beans 2 can (12 oz) Cooked chicken
10 Flour tortillas 3 cups Cheddar shredded
1 can (12 oz) Cream of Chicken Soup 1 can (12 oz) Enchilada sauce
8 ounce Sour cream

Instructions for Chicken Enchiladas

Spread about 2 Tbsp of beans on each tortilla. Combine soup and sour cream; stir in chicken. Spoon 1/3 to 1/2 cup down the center of each tortilla; top with 1-2 Tbsp cheese. Roll up and place seam side down in a greased baking dish. Pour enchilada sauce over top; sprinkle with remaining cheese.

Bake, uncovered, at 350 for 35 minutes or until heated through.

Really good! I didn't know if it was going to be any good or not with the cream of chicken, but it turned out really great! I added onions and green peppers for some extra flavor. Amazing.. must try! Oh.. and Ortega thick and smooth taco sauce is the best with this. =)
