Rainbow Gazpacho - Weight Watchers (2 Points) Ingredients

1.5 cups pineapple juice 2 large peaches pitted and chopped
2 medium yellow tomatoes cored and cut up 1.5 cups peeled chopped cantaloupe (about 1/2 of a medium)
1 small yellow sweet pepper stemmed, seeded, and cut up 2 tablespoons lime juice
1 medium orange peeled, sectioned and seeded 2 tablespoons snipped fresh cilantro
1 medium red or green jalapeno pepper seeded and cut up1 Orange; slices

Instructions for Rainbow Gazpacho - Weight Watchers (2 Points)

Place pineapple juice, tomatoes, sweet pepper, orange, jalapeno pepper, and half of the melon in a blender container or food processor bowl; cover and blend or process till coarsely chopped. Transfer to a large bowl. Stir in remaining peaches, melon, lime juice, cilantro, and 1 1/4 teaspoon salt. Cover and chill at least 2 hours.

To Serve: spoon into small soup bowls and garnish with orange or lime slices and cilantro, if desired.
