Farmer Juan's Portobello Quesadillas Ingredients

1 lb Portobello mushrooms 8 tablespoon Green Onions chopped
8 Tortillas 1 1/2 cup Sharp Cheddar shredded

Instructions for Farmer Juan's Portobello Quesadillas

1. Cut portobello mushrooms into one-inch pieces
2. Saut? portobello mushrooms in medium skillet over medium-high heat until brown and cooked through. Put aside.
3. Heat a cast iron skillet or griddle over medium heat
4. Place a tortilla on the skillet, warm one side for about 10 seconds, flip it over
5. Place 2 tablespoons of shredded cheese, 2 tablespoons of saut?ed portobello mushrooms on the tortilla. Spread 1 more tablespoon of cheese on top of the portobello mushrooms, sprinkle 1 tablespoon of chopped green onions. Fold the tortilla in half. Cook for 5 seconds. Take the quesadilla out of the skillet. Serve.
