Chewy Oatmeal Raisin Cookies Ingredients

1 stick Butter softened	1/2 teaspoon Baking soda
3/4 cup Brown sugar firmly packed	1/2 teaspoon Cinnamon
1/4 cup Granulated sugar	1 1/2 cups Quick cooking oatmeal uncooked
1 large Egg	3/4 cup Raisins
2/3 teaspoon Vanilla	1/4 teaspoon Salt optional
3/4 cup Flour

Instructions for Chewy Oatmeal Raisin Cookies

Preheat oven to 350. Beat together butter and sugars until creamy. Add egg and vanilla and beat well. In a seperate bowl, combine flour, baking soda, cinnamon, and salt (optional) and mix well. Add combined flour mixture to the sugar mixture and stir until blended Stir in oatmeal and raisins and mix well. Drop by rounded tablespoons onto an ungreased cookie sheet and bake 10-12 minutes or until golden brown. Cool one minute on cookie sheet and remove to wire rack to finish cooling.

I really liked this. I only had 3/4 cup of flour and this was the only recipe that called for that little flour. Turned out great! I did grease the cookie sheets and used trails mix opposed to raisins.. yum yum
