This is a very nice filling. A good way to use up leftovers. We also like this on pasta

Jan's Dijon Chicken Salad Sandwiches Ingredients

3/4 cup mayonnaise tomatoes, slices
1/4 cup sliced green onions (chives) diced fine1 tablespoon Honey
1 tablespoon Dijon mustard 1 stick Celery diced fine
1 tablespoon chopped fresh dill or 1 teaspoon dried dill diced fine1/4 teaspoon Black pepper ground
2 cups cubed cooked chicken diced fine6 medium Multi grain rolls
lettuce leaves

Instructions for Jan's Dijon Chicken Salad Sandwiches

Mix together well, mayonnaise, Dijon mustard, honey and pepper.

Dice finely togther Chives, Celery and Dill.

Fold in the Dill mix into the mayonnaise mix. I do it this way so it is well mix in with the mayonnaise, as once you add the chicken it is harder to blend and it gives the mayonnaise and nice green colour if you do this first.

Fold in the chicken to the mayonnaise and Dill mix.


Spread the chicken mix onto the bread rolls and fill the bread rolls with lettuce, tomato slices.

Jan''s notes you can use tart apples instead of the onions or as well as. We also like this over pasta Cook the pasta, drain and put back into the pot add chicken mix and reheat [I posted this recipe.]
