Lamb: Skewers with Greek Wet Rub Ingredients
1 lb
Lamb
for kebabs
1 tablespoon
Lemon
juice
1/4 c
Oregano
fresh
2 teaspoon
Salt
2 tablespoon
Rosemary
fresh
2 teaspoon
Lemon
grated rind
3 tablespoon
Olive oil
4 cloves
Garlic
Instructions for Lamb: Skewers with Greek Wet Rub
Place all ingredients (other than lamb) above in food processor and process until finely chopped. Season lamb with it.
Prepare a wet rub just before cooking. Wet rub flavors tend to dull quickly, so they're not good make-ahead candidates.
Fire up the grill before you coat the food. Pat a wet rub into place right before the food goes on the grill. Set the rubbed food on the grill, and leave it undisturbed for at least two or three minutes so the crust begins to form.
Use wide, thin utensils when turning foods with wet rubs to keep the delicate crust intact. lf possible, turn the food only once (or not at all). `Turning often can chip or break the crust.
