Cowboy Caviar Ingredients

15 oz can Bush's black beans rinsed and drained1/4 teaspoon Red pepper crushed
4 oz can Ripe olives chopped1/4 teaspoon Ground cumin
1/4 cup White onion finely chopped and rinsed1/8 teaspoon Pepper
1 clove Garlic finely chopped8 oz Cream cheese softened
2 tablespoons Vegetable oil 2 large Eggs hard cooked, peeled and chopped
2 tablespoons Lime juice fresh squeezed1 Green onion with top sliced
1/4 teaspoon Salt

Instructions for Cowboy Caviar

Drain and rinse the black beans; drain the chopped ripe olives.

Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate at least 2 hours.

Spread cream cheese on a serving plate and spoon bean mixture evenly over the cream cheese.

Arrange chopped eggs on bean mixture in a ring around the edge of the serving plate and sprinkle with green onion.

Serve with crackers.
