Salmon Burgers Ingredients

2 lb Salmon ground (cut into chunks and pulsed in food processor)4 Shallot chopped
1 c Breadcrumbs 1/2 c Parsley chopped
1 Cucumber small, peeled, seeded, chopped6 Buns onion or whole wheat

Instructions for Salmon Burgers

In bowl, combine first 5 ingredients and mix lightly but thoroughly. Divide into 6 equal portions and shape each into 3-inch patties that are 3/4 inch thick. Place on a plate and refrigerate until ready to grill.

Prepare grill for direct grilling over med-high heat. Oil the rack or grilling basket. Arrange patties on the rack directly over heat elements. Cook patties, turning once, until cooked through when tested with a knife, 5-6 min per side. About 1 minute before the burgers are ready, place the bun halves, cut sides down, on area with lower heat and toast lightly.
