Jalspeno Cheeseburgers with Bacon and Grilled Onions Ingredients

FOR THE SPICY RANCH SAUCE 1 tsp Black pepper fresh ground
1 cup Mayonnaise 1/4 tsp Cayenne pepper
1 cup Sour cream FOR THE WORCESTERSHIRE-COFFEE GLAZE
1/2 cup Fresh cilantro chopped1/3 cup Light corn syrup
6 tbs Lime juice freshly squeezed2 tbs Worcestershire sauce
4 Green onions finely chopped2 tbs Ketchup
2 tbs Jalapeno chile seeded, minced1 tsp Instant coffee crystals
1/2 tsp Cayenne pepper 2 tsp Golden brown sugar packed
FOR THE BURGERS 3 tbs Butter
2 pounds Ground Sirloin 16 slices Bacon fried crisp
1 small (about 1-1/4 c Onion chopped Non-stick vegetable oil spray
1/4 cup Fresh parsley chopped8 large Hamburger buns plain
2 tbs Worcestershire sauce 8 Iceberg lettuce leaves washed and dried
1 tbs Jalapeno chile seeded, chopped2 cups Shredded sharp cheddar cheese
1 tsp Salt Assorted toppings such as sliced tomato, onion slices, etc

Instructions for Jalspeno Cheeseburgers with Bacon and Grilled Onions

For the spicy ranch sauce:
Whisk all ingredients in a medium bowl. Season mixure wih salt and pepper to taste.

For burgers:
Gently mix all ingredients in a large bowl.Form mixture into eight ?- to ?-inch thick patties. Place on baking sheet. Cover and chill at least 2 hours and up to 1 day.

For glaze:
Stir first 5 ingredients in small saucepan over medium heat until coffee crystals are dissolved. Remove from heat. Whisk in butter. Season glaze to taset with salt and pepper.

Prepare grill (medium-high heat). Meanwhile grill is heating, working in batches, if necesary, cook bacon in a large skillet over medium-high heat until crisp and brown. Transfer cooked bacon to paper towels to drain.

Spray grill rack with non-stick spray. Toast buns until golden, about 2 minutes per side. Transfer buns, cut side up, to plates. Place letter leaf on each bun bottom. Grill burgers 5 minutes, basting with glaze. Turn burgers, baste again with glaze and grill until cooked to desired doneness, about 5 minutes longer for medium. Press cheese atop each burger and allow cheese to melt. Place some ranch sauce, then 1 burger on each bun bottom. Top each burger with 2 slices of bacon and desire additional toppings=. Cover with bun top. Serve with remaining sauce.
