I haven't tried this yet, but it's supposed to be similar to what Poncho's serves. I like the stew served over rice.

Beef Green Chili Stew Ingredients

1 tablespoon Vegetable oil 1 teaspoon Garlic salt
2 pound Lean beef stew meat 1 teaspoon Ground cumin
1 onion Onion chopped Salt to taste
1 10 ounce Diced tomatoes with green chili peppers Ground black pepper to taste
1 1/2 cups Beef broth 2 large Potatoes peeled and cubed
1 4 ounce Chopped green chili peppers

Instructions for Beef Green Chili Stew

In a large pot over medium heat, heat the oil and brown the stew meat and the onions until onions are translucent; about 5 minutes. Pour in diced tomatoes, beef broth, and chili peppers. Stir in the garlic salt and cumin. Salt and pepper to taste. Bring to a boil, reduce heat and simmer for 1 hour. Add a little more beef broth or water if needed during simmering. Stir in cubed potatoes and simmer for an additional 30 minutes or until potatoes are tender. Serve over rice or with cornbread.

I did make this and while it was very flavorful and slightly spicy, I will make the following changes next time I make it and some suggestions for those planning to try it. The beef stew meat that I used was pretty tough, even after cooking for about an hour longer than the recommended time. Because of the increased cooking time, I ended up adding 32 ounces of beef broth. I also added a diced poblano pepper and salted and peppered the meat while browning. Next time, I will try this recipe using pork tenderloin. I think Green Chili Stew is supposed to be made with pork, but if you decide to use beef, I think I'd try making this a crock pot recipe after browning the meat. A crock pot seems to make all types of meat tender due to the slow cooking over longer periods of time. I am upgrading it from 4 stars to 5 because of the excellent flavor of the dish!
