Chickpea Cilantro Dip with Grilled Pita and Carrot Sticks Ingredients
1 cup
Chickpeas
canned, rinsed & drained
1 tablespoon Water
1/4 cup
Yogurt
plain
1/4 teaspoon
Salt
1/2 cup
Cilantro
chopped
2 each
Pita
loaves split in half
1 clove
Garlic
chopped
1/2 pound
Carrot
trimmed, cut into sticks
1 1/2 tablespoon Fresh
lemon
juice
Instructions for Chickpea Cilantro Dip with Grilled Pita and Carrot Sticks
Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill and on lid.
Slip skins from chickpeas with your fingers, then pur?e chickpeas with yogurt, cilantro, garlic, lemon juice, water, and salt in a food processor until smooth.
When fire is hot (you can hold your hand 5 inches above rack for 1 to 2 seconds), grill pitas on lightly oiled grill rack, uncovered, turning once, until golden, about 2 minutes total.
Serve dip with pitas and carrots.

I made this today to pack into the kids lunch boxes. I left out the garlic as the kids tend to turn up their noses at it. So the portion I packed for myself was a bit, um bland. Next time, I would fry up some finely chopped onions and garlic and add this into the blender, instead of just raw garlic. Also, I know it is hardly a healthier option, but I would add in olive oil insetad of water. All in all, it is a good snack and I will probably make it again. Of course, I have to wait for my kids to give me the final decision making feedback, but from my experience, if it is a dip, they like it!

? Dip can be made 1 day ahead and chilled, covered. Bring to room temperature before serving. ? Pitas can also be grilled in a lightly oiled well-seasoned ridged grill pan over moderately high heat. [I posted this recipe.]
