Preparation
1. Carefully take the stem out of your mushroom. A little lift and twist should do it.
2. Cut a fat slice of tomato that will fit into your mushroom. Make it sit a bit lower than the mushroom rim and pop it in.
3. Put a drop of olive oil onto a dish and plop your mushy onto it then drizzel the rest of the oil all over your tomato and mushroom. Easy eh! Put it into a very hot oven for about 10 to 15 minutes or until the mushroom looks cooked. (shrivelled a little and goes from white to a darker colour)
4. Salt and pepper your tomato, pile up the cheese in the middle of it and put the two basil leaves on top. Back into the oven with it, till the cheese goes all melty...mmmm. Then Serve with a few salad leaves!
*you can do miniature ones with button mushrooms and cherry tomato. Nice party 1.
