Basil-tomato Grilled Cheese Ingredients
8 slices Italian bread
Salt and
pepper
to taste
8 slices
Mozzarella
cheese
1/4 cup
Olive oil
2 large
Plum tomatoes
3 tablespoon
parmesan
cheese grated
2 tablespoon Fresh basil
minced
1/4 teaspoon
Garlic
powder
2 tablespoon
Balsamic Vinegar
Instructions for Basil-tomato Grilled Cheese
On four slices of bread, layer cheese and tomatoes; sprinkle with basil, vinager, salt and pepper. Top with remaing bread.
In a small bowl, combine the oil, parmesan cheese and garlic powder; brush over the outsides of each sandwhich. On a griddle, cook sandwhiches over medium heat until golden brown on both sides.

This recipe has all the flavor of a caprese salad in sandwich form. Yum! I didn't have any french bread, so I used whole grain. I used just a spray of vinegar and next time I would brush the oil on the bread and then press the sandwich into the parmesan cheese. Can't wait to try again using french bread!
