Holiday Rutabaga Casserole

People go crazy for this! Strange but true. Great with Thanksgiving or Christmas dinner--it always gets eaten up. Rutabagas are definitely recommended over turnips (some people treat them interchangeably, but rutabagas are more mellow).

Preparation

Peel and cut rutabagas into ?-inch cubes. Heat one-inch of salted water to a boil, add the rutabagas. Heat back to a boil, then decrease heat and cook till tender, about 20 minutes. Drain the rutabagas BUT SAVE ? cup of the cooking liquid. Mash with the reserved liquid, or use a food processor. Add everything else but the buter. Put in a 1? quart casserole, dot with the butter. Cook at 350 until light brown on top, 45-50 minutes.
