Speedy Enchilada Bake Ingredients

1 cup chopped Italian plum tomatoes 8 oz. (2 cups) shredded mild Cheddar cheese
1 can (12 oz) Black or pinto beans drained1/4 cup sliced green onions
1 (11-oz.) can Green Giant Mexicorn Red and Green Peppers1 can (10 oz) Enchilada Sauce
4 cups (5 oz.) small round com tortilla chips

Instructions for Speedy Enchilada Bake

Heat oven to 375?F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In medium bowl, combine tomatoes, com and enchilada sauce; mix well.

In sprayed baking dish, layer half of the taco sauce with beans, 1 1/2 cups of the chips, 1/2 cup of the cheese and half of com mixture. Top with remaining taco sauce with beans, 1 1/2 cups chips, 1/2 cup cheese and remaining com mixture.

Sprinkle with remaining 1 cup cheese and onions. Arrange remaining 1 cup chips upright around edge of baking dish, overlapping as necessary.

Bake at 375?F. for 35 to 40 minutes or until bubbly and thoroughly heated.
