Ingredients
- 1 refrigerated pie crust
- 3 Tablespoon butter & some fresh minced garlic
- 10 oz. frozen chopped spinach thawed squeezed dry
- 1/2 t. salt & pepper
- 1/4 t. nutmeg
- 3 eggs at room temperature (get out when you start to make pie)
- 1 15oz. ricotta cheese
- 1 cup mozzarella shredded
- 1 cup grated parmesan
Preparation
Put pie crust in pie plate. Melt butter in pan, add garlic and sautee spinach until warmed through. Add the salt, pepper and nutmeg and remove from heat. In a separate bowl, combine the eggs and the cheeses. Add the warm spinach to the cheese mixture and stir. Pour into pie crust.
Bake at 350 for 40 minutes.
To make ahead, put covered pie in refrigerator. Before baking, let pie sit out, warm up a bit.
Bake as instructed above.
