Spinach and Black Bean Burritos

Ingredients

  • 1 (10 oz.) package of frozen chopped spinach thawed and drained
  • 1 can black beans rinsed and drained (cooked chicken can be substituted- Tyson ma
  • 1 can cream of mushroom soup (Healthy Request is fine)
  • 1 (8oz.) carton light sour cream
  • Small can chopped chilies
  • 1 block of Kraft Monterey Jack cheese with jalape?o (can be done with plain Monterey jack)
  • 10 large flour tortillas (room temperature)
  • Pam spray

Preparation

Shred cheese and mix with the rest of the ingredients in a large bowl. Spoon the mixture into the center of flour tortilla. Fold one end and roll up. This recipe should make 10 burritos or more if you use smaller flour tortillas. Spray a casserole dish with Pam. Bake uncovered at 350 for 20 minutes, or until lightly browned on top. Unbaked burritos freeze well. I freeze them in individual Ziplocs for lunches.
