Everyone loves this mac and cheese! Sharp cheddar is good, but if you want to substitute some other kinds of cheese for part of the cheddar, it's a good way to use leftover cheese.

Barb's Macaroni and Cheese Ingredients

8 ounces Macaroni (dry, about 2 cups)1/2 teaspoon salt
4 Tbs butter 1/2 teaspoon dry mustard
3/4 cup breadcrumbs 1/4 teaspoon pepper
1 small minced onion 1 1/2 cups milk
1 Tbs flour 8 ounces shredded sharp cheddar cheese

Instructions for Barb's Macaroni and Cheese

Boil macaroni and drain. Heat oven to 350?. Grease 2-qt casserole. Melt HALF of the butter and add crumbs and toss to coat. Meanwhile make cheese sauce. In med. pan over med. heat, melt the remaining butter, add onion and cook till tender; stir in flour, salt, mustard, and pepper till blended and cook one min. Gradually stir in milk; cook till mixture THICKENS, stirring constantly. Remove saucepan from heat, stir in cheese till melted. Place drained macaroni and sprinkle crumbs on top. Bake 20 mins or till bubbly and crumbs are golden. Serve with hot sauce and steamed garlic broccoli.
