Apricot Chicken Ingredients
3/4 cup
Apricot
Preserves
1/8 teaspoon
Pepper
3/4 teaspoon Dry
Mustard
1 can Cherry Cola (Divided)
3/4 teaspoon
Salt
8 small
Chicken
Thighs (Skinned)
Instructions for Apricot Chicken
Combine preserves, dry mustard, salt and pepper in a medium bowl and mix well. Add 1 cup cola gradually, stirring to mix well.
Arrange chicken in a large skillet. Spoon apricot mixture over the chicken.
Cook over high heat until the mixture comes to a boil, about 8 minutes. Reduce heat to medium-high. Cook covered, for 10 minutes.
Baste chicken with skillet drippings. Reduce heat to medium.
Cook the chicken, uncovered, turning and basting frequently, until an instant-read thermometer inserted in center of the meat registers 180?, about 20 minutes. Remove chicken. Stir remaining cola into drippings to make a sauce. Return chicken to the skillet. Spoon sauce on top. Serve hot.
