Chocolate Filled Coconut Wafers Ingredients

-- Wafers --1 cup Corn flakes crushed
1 cup Flour sifted1 cup Quick-cooking rolled oats
1/2 teaspoon Baking soda 1/2 cup Coconut
1/4 teaspoon Salt -- Chocolate Filling --
1/2 cup Brown sugar firmly packed1 cup Semi-sweet chocolate chips
1/2 cup Sugar 1/2 cup Powdered sugar
1/2 cup Butter softened1 tablespoon Water
1 Egg 3 ounce Cream cheese
1/2 teaspoon Vanilla

Instructions for Chocolate Filled Coconut Wafers

Preheat oven to 350 degrees.

Sift flour, soda and salt together. Set aside.

Combine butter, brown sugar and sugar; cream well.

Blend in egg and vanilla; mix well.

Add in flour mixture and mix thoroughly. Stir in corn flakes, rolled oats and coconut.

Shape into balls using a level teaspoonful for each. Place on greased cookie sheet. Flatten with the bottom of a smooth/flat cup or drinking glass dipped in flour.

Bake for 8 to 10 minutes. Cool.

For filling, melt chocolate chips with powdered sugar and water in a double boiler (or in a sauce pan over a larger pan of boiling water). Blend in cream cheese and beat until smooth. Cool.

Take two cookie wafers. Spread chocolate filling one the flat side of one wafer, and cover with the flat side of the second wafer, sandwich style.
