Preparation
Preheat oven to 350 degrees.
Sift flour, soda and salt together. Set aside.
Combine butter, brown sugar and sugar; cream well.
Blend in egg and vanilla; mix well.
Add in flour mixture and mix thoroughly. Stir in corn flakes, rolled oats and coconut.
Shape into balls using a level teaspoonful for each. Place on greased cookie sheet. Flatten with the bottom of a smooth/flat cup or drinking glass dipped in flour.
Bake for 8 to 10 minutes. Loosen from cookie sheet after one or two minutes. Cool.
For filling, melt chocolate chips with powdered sugar and water in a double boiler (or in a sauce pan over a larger pan of boiling water). Blend in cream cheese and beat until smooth. Cool.
Take two cookie wafers. Spread chocolate filling one the flat side of one wafer, and cover with the flat side of the second wafer, sandwich style.
