Jambalaya Ingredients

4 ounces bacon -- diced 1/4 teaspoon basil
1 large onion -- diced 1/4 teaspoon cayenne pepper
1 large green bell pepper -- diced 1/2 teaspoon tobasco sauce
3 cloves garlic -- minced 1 teaspoon worcestershire sauce
1 pound smoked sausage or andouille -- sliced 1/4 2 cups rice
1 pound chicken breast -- diced 3 cups chicken broth
1 teaspoon salt 1 14oz. can diced tomatoes
1/4 teaspoon thyme 1 pound medium shrimp -- peeled and devained

Instructions for Jambalaya

Render bacon in a large ovenable pot or casserole. Add chicken and cook half way. Add smoked sausage and vegetable and cook until vegetable are tender. Add seasonings to pan and stir. Add rice and stir. Add chicken broth and tomatoes. Bring to a boil. Reduce to a simmer. Cover and place in a 350?F oven. Cook for approximately 15 minutes. Add shrimp to pan. Push shrimp under the rice. Cover and cook an additional 10-15 minutes until shrimp are cooked and rice has absorbed all the liquid. Serve in bowls topped with sliced scallions.
