Cornish Game Hen L'Orange In Couscous Ingredients

30 Cornish game hens 2 bunches Cilantro chopped
1 gal Orange juice 12 Star anise whole
1 Pepper 2 sticks Cinnamon crushed
2 cups Rice wine vinegar 2 tblspoons Red pepper crushed
2 cups Apple cider vinegar 1 tblspoons Cloves whole
1 cup Dark brown sugar 12 Black peppercorns whole
6 cloves Garlic crushed 1 cup Kosher Salt
0.25 cup Ginger peeled and sliced 30 Oranges halved
1 bunch Green onion chopped

Instructions for Cornish Game Hen L'Orange In Couscous

1. Brine the cornish game hens for 12 hours making sure the game hens are completely covered with the brine. Maintain brine temp ~~lt 40*F

2. Pull game hens out of brine and pat dry.

3. Place 1 orange half in each cavity,

4. Stand upright on grill and cook until internal temp of 145*F then pull off grill, place in warming tray and let them continue to "carry over" cooking.

5. When ready to serve, cut the game hens in half, run them over the grill briefly for grill marks then arrange on couscous and serve
