Heat olive oil over high heat in a wide skillet. When oil is very hot, add mushrooms and onions, and spread them out to make a shallow layer covering the bottom of the skillet. Allow them to cook for about three minutes; they will likely give off a good deal of liquid. Stir, shake the pan to spread them out and cook three minutes more. Most of the liquid should be gone, but don't allow to burn.
Add the diced Roma tomatoes and pepper flakes, and stir. Cook about three minutes, then add the crumbled blue cheese and wine.
Stir until cheese melts and tomatoes are cooked. Drain linguine, and place on four serving plates. Top with vegeables and blue cheese, then sprinkle with Parmesan cheese. Serve.
Gorgonzola cheese may be substituted for the Blue cheese.
Chipotle pepper flakes may be substituted for the dried pepper flakes.
