Ingredients
- 1/2 cup Orange juice
- 1 tsp Garlic lemon pepper seasoning mix
- 1/8 tsp Chili pepper flakes to taste
- 1/2 teaspoon Garlic herb butter LACTANCIA is what we use
- 4 filets Trout or substitute fish - skin on is fine
- 6 ea Orange slices optional
- 1/2 c Lemon juice alternative
Preparation
In a skillet large enough to hold the filets over med hi heat pour the orange juice, add chili flakes and butter till melted, -- add the fish skin down -- add spices over top. Cover - steam (poach) until fish is just almost flaking (flaking is overcooked)... Check occasionally and add more Orange Juice if needed. The sauce will have reduced -- pour over the fish and serve. If you have extra orange slices you can garnish with them.
Alternative method - whole side of fish required
in fish grilling cage - put fish, add spices to fish, some garlic powder (sparingly) and top slices of orange, close cage -- grill till fish is cooked thru on bbq -- pouring Orange Juice on the fish during cooking
my family loves this - its they only way they will eat trout ---
Alternative -- all same ingrediants -- swap orange juice for Lemon juice - omit oranges.
