There's a fair bit of chopping in this soup, but it's sure a comforting winter meal.
Cook bacon in a large soup pot until done. Set bacon aside, leaving fat in pot. Add butter, leeks, and celery, and cook on low heat for 5 minutes. Chop cooled bacon and add, along with remaining ingredients. Bring to boil. Lower heat and simmer 30 minutes. Puree half the soup in batches in a blender, or use a stick blender to partially blend soup.
