Peas with Cilantro and Coconut (gujarati, Madhur Jaffrey) Ingredients
2 tbsp
Coconut
dried, UNsweetened
1 tbsp
Sesame seeds
roasted and coarsely ground
1/3 c
Cilantro
finely chopped
1 dash Ground
black pepper
1/2 small
Jalapeno pepper
minced
10 ounce
Peas
frozen
1/4 tsp
Salt
4 tsp
Butter
1 tsp Sugar or
Splenda
Instructions for Peas with Cilantro and Coconut (gujarati, Madhur Jaffrey)
Mix the first seven ingredients in a bowl. Bring a cup of water to boil in a sauce pan. Add peas. Bring to a second boil. Cover and cook two minutes. Drain peas in a colander. Melt the butter in the same saucepan over low heat. Add the peas and coat with butter. Add the seasonings and mix gently. Cover the saucepan and steam on very low heat for 2-3 minutes, stirring once or twice as they steam.
