Potatoes and Tomatoes with Coconut (kutchi, Madhur Jaffrey) Ingredients

3 medium Boiling potatoes 3/4-inch dice1/2 tsp Turmeric
4 tbsp Vegetable oil 2 tsp Ground cumin
6 cloves Garlic minced28 ounce Tomato diced, canned
1 whole Dried red hot pepper 2 tsp Salt
1 tsp Cumin seeds 2 tsp Sugar or splenda
1/2 cup Coconut dried, UNsweetened1 tsp Red wine vinegar

Instructions for Potatoes and Tomatoes with Coconut (kutchi, Madhur Jaffrey)

Heat the oil in a 3-qt pot over medium high heat. When hot, put in the garlic, then the red pepper and the cumin seds. Lower heat to medium, put in coconut and stir it for 10-15 seconds. Add potatoes as well as turmeric, ground cumin, tomatoes, salt, and 1-and-a-half cups water. Bring to boil. Cover, turn heat to low, simmer for 45 mins or until potatoes are tender. Stir gently every few minutes. Add sugar and vinegar. Stir and cook uncovered for a minute. Serve over rice or with Indian breads.
