Penne with Sundried Tomatoes and Lemon Ingredients

250 g Penne pasta 1 large Lemon Juiced
Butter 1 tbs Thyme
Olive oil 1/3 cup Sundried Tomatoes
1 Onion chopped1/2 cup Pine nuts toasted
3 rashers Bacon chopped500 g Chicken Breast cubed

Instructions for Penne with Sundried Tomatoes and Lemon

Cook pasta to desired liking and drain

Heat butter and oil in large pan. Add bacon and onions. Stir over medium/high heat for 4 mins or until bacon is browned.

Remove from pan. Add butter and oil to pan and brown chicken on medium/high heat.

Return bacon and onion to pan.

Add lemon juice, thyme, tomato and pine nuts - mix thoroughly.

Add drained pasta to pan and stir through to coat well. Turn heat off and let sit for a couple of minutes before serving.
