Cream Of Red Onion Soup Ingredients
2 teaspoon Unsalted
butter
2 cup
Chicken stock
1 1/2 pound
Red onion
thinly sliced
2 cup
Milk
2 ribs
Celery
thinly sliced
1 cup Whipping
cream
1/8 teaspoon
White pepper
1 tablespoon Dry
sherry
optional
1/4 teaspoon
Ground nutmeg
1 cup
Crouton
s seasoned
Instructions for Cream Of Red Onion Soup
Melt butter in a heavy pot over low heat. Add onion and celery. Cover and cook 15-20 minutes until celery is softened. Add next 3 ingredients and salt to taste. Increase heat to medium high and bring to a boil. Reduce heat to medium low and simmer 10 minutes. Transfer mixture to a food processor or blender and pur?e until smooth. Return pur?e to pot. Stir in milk and simmer 10 minutes over medium heat. Add cream and simmer until just hot. Do not boil. Remove from heat. Stir in sherry and serve with croutons.
