Candied Popcorn

I made this without the peanuts and I didn't miss them at all (lower fat content). You could probably use corn syrup if you don't like honey.

Ingredients

  • 13 cups popped 94% fat-free butter flavor microwave popcor prepared
  • 1 egg white lightly beaten
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 cup splenda granular
  • 1/2 cup peanuts optional

Preparation

Preheat oven to 325 degrees. Spray 15x10x1 inch pan with cooking spray. Put popcorn in large bowl. Set aside.

Combine egg white, honey, vanilla and Splenda in mixing bowl, whisk until blended. Stir in peanuts. Pour mixture over popped corn, toss to coat. Spread mixture in prepared pan.

Bake 25 minutes. Stir occasionally. Remove from oven, spread on waxed paper to cool. Store in an airtight container.
