Little fluffy pancakes topped with whatever you like. Great for cuppa tea's / coffee mornings. And when the cupboards are bare, this one is for you!

Pikelets Ingredients

1 cup Self raising flour 1 tablespoon Cream
1 Egg 3/4 cup Water
1/2 tablespoon Sugar 1 pinch Salt small pinch

Instructions for Pikelets

(if you are using plain flour just pop some baking powder in)


1. Plop everything except the water into a bowl. Pour in half the water and mix. Add more water untill you get a thick slow running batter.

2. Spoon desertspoon fulls into a hot greased pan. Wait till bubbles come up and bust then flip over.

3. Serve with rasberry jam and cream!


Or anything else you fancy. Jams, berries and honey.
