Mockafoni and Cheese Lite

This low carb rendition of macaroni and cheese is a favorite of my carb-conscious Dad.

Ingredients


Preparation

Cook the cauliflower in microwave until tender; about 10 minutes. In a 1 1/2 quart casserole soften Neufchatel (Philadelphia's is lowest in carbs) in microwave about 30-40 seconds. Mix in half-and-half and water until smooth then stir in 4 ounces cheddar cheese. Microwave on high about 2 minutes or until cheese is melted. Stir well until creamy and smooth, microwaving a little longer if necessary. Stir in the green onions, chives, salt and pepper. Add the cauliflower and gently fold into cheese sauce to coat well. Top with remaining 2 ounces cheese and bake uncovered at 350? for 35 minutes until bubbly and brown on top.

This freezes well.

Per 1/3 Recipe with Philadelphia Neufchatel: 358 Calories; 26g Fat; 20g Protein; 8g Carbohydrate; 2g Fiber; 6g Net Carbs

*Making two batches instead of one takes only a few extra minutes of prep and baking time. Since a second batch neatly uses up the remaining packet of neufchatel, it just makes sense to make a second casserole while you have all the ingredients at your fingertips.

Do all of the cooking at home as it is my hobby which doesn't bother my wife at all. The ingredients look fine. My concern is whether the cauliflower stays firm enough and doesn't get mushy.
