Ingredients
-- For the Grapefruit Salsa --
- 1 each Grapefruit ruby, segmented & finely chopped; reserve juices
- 1 each Kiwi fruit peeled & finely diced
- 1/2 medium Red onion finely chopped
- 1/2 each Apple red, finely chopped
- 90 mililiter Coriander sprigs or parsley, minced
- Salt & pepper to taste
Preparation
1. Stir together all ingredients except oil in a large bowl. Heat 2.5 cm of oil over medium-high heat in a large heavy-bottom frying pan. Drop tablespoonfuls of potato mixture into the hot oil, flattening each mound slightly. Fry, turning once, until crisply brown. Drain well on paper towels. Serve warm with salsa or sour cream and honey.
2. Combine all salsa ingredients and reserved juice. Place teaspoonfuls on top of the latkes.
