Tempura Batter Ingredients

2 cups All purpose flour sifted1/4 cup Corn starch
2 tablespoons Baking powder 1 teaspoon Baking soda
1 teaspoon Salt 2 ea Eggs slighty beaten
1 1/2 cups Water Ice Cold

Instructions for Tempura Batter

Combine Flour, Baking Powder, Baking Soda, Corn Starch in a bowl, Add Salt, Eggs and Water. Stir until flour is moisteded. Batter should be slightely lumpy. Dip Shrimp, Fruit or Vegatbles in batter and deep fry at 350f.

In cooking you need to use comeandsense, products vary from state to state, country to country, in this case you need to add just a little more ice cold water and try one or two pieces of calamari first, to find the right texture of the batter. Also be shure the water is ICE-COLD. kind regards Chef Rene

This recipe does not make tempura! You end up with a thick batter that is more like a beer batter, I may substitute water for beer but will most likely never use this recipe again. IT IS NOT TEMPURA! I was very disappointed, it could have ruined my calamari dish but thank goodness no one was set on having tempura! The flavor was not bad, just not a good recipe at all!
