Shmoo Torte Ingredients
6

whites
1 cup
Pecans
chopped finely
6
egg
yolks
2 cups Whipping
cream
1/4 tsp.
Cream
of tarter
2 tblspoons Icing
sugar
1 cup White
sugar
divided
1 cup Whipping
cream
1/2 tsp.
Vanilla
1 tblspoons
Butter
1/2 cup
Flour
1 1/2 cups
Brown sugar
1 tsp.
Baking powder
Instructions for Shmoo Torte
Oil bottom of a 10 inch tube pan. Set aside. Preheat oven to 325.
In a large bowl beat egg whites until almost stiff. Add cream of tarter and very gradually add 1/2 cup of the sugar. In another bowl beat egg yolks until light. Add remaining 1/2 cup of white sugar and the vanilla.
Fold yolk mixture into the whites. Then fold in flour and baking powder. fold in chopped nuts. Pour batter into prepared pan and bake for one hour. Remove from oven and invert to cool. When cool remove from pan. Slice cake into 3 equal layers.
Filling:
Whip 2 cups of whipping cream, sweeting with the icing sugar. Use to fill between layers and to cover sides and top of torte.
Sauce:
Bring 1 cup of whipping cream, butter and brown sugar to a boil in a sauce pan. Remove from heat and cool. Just before serving, rewarm and drizzle over the torte. Serve remaing sauce on the side. You may want to make 1 1/2 or 2 times the sauce as it is very good.
