In a large saute pan or electric frying pan, fry chicken in oil over medium - high heat until evenly browned.
Remove chicken and cook onions until translucent, about 10 minutes.
Replace chicken; add salt and pepper, tomatoes, bay leaf and rice.
Cook over low heat for about 1 hour, or until rice is fully cooked.
Remove bay leaf and serve.
Can be made in the slow cooker - brown chicken skin side down in the pan,then put in slow cooker. Cook onions and then put in slow cooker. Put canned tomotes on top of the chicken and onions. Add chicken broth and tomato juice to cover. Cook on low 8 hours or high 4 hours. Add rice and cook on high for one hour or until done.
