Preheat the oven to 325? F. Line a 11x14 jelly role pan with parchment.
In a large bowl, mix together the dry ingredients (oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt.) Pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan. (A plastic glove is my secret for a neat and tidy way to mix and press the dough into the pan.) Precut the bars before baking to make the baked bars easier to cut.
Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Remove from oven and cool for a few minutes before cutting again on the precut lines.
Instead of just raisins... dried cranberries, sunflower seeds, almonds, chocolate chips, coconut, peanuts
Instead of just cinnamon, try pumkin pie spice!
Prefer soft granola bars? Use a 9x13 pan and bake at 350 for 25 minutes.
