Corn-crusted Scallops with Homemade Tartar Sauce

Ingredients

Preparation

Combine the sauce ingredients in a bowl. Cover and store in the fridge until needed. Line a baking sheet with parchment paper. Brush the parchment with the vegetable oil.

Preheat the oven to 425?F. Place the cornflake crumbs, paprika, salt and pepper in medium bowl. Place the scallops and mayonnaise in a second bowl. Toss to thoroughly coat the scallops with mayonnaise. Coat a scallop in the cornflake crumb mixture, gently pressing the crumbs on to help them adhere. Set the coated scallop on the baking sheet; repeat with the remaining scallops.

Bake the scallops for 5 minutes, then turn each one over and bake 5 minutes more.

To serve, garnish with lemon slices, with tartar sauce alongside for dipping.
