This recipe is fast but impressive. It deserves a special occasion.
~Process garlic, nuts and cilantro to a coarse paste. Add lemon jiuce, olive oil and parmesan and process until smooth. Add cayene, salt and pepper.
~Preheat oven to 425?. Coat lamb generously with pesto, place in roasting pan and bake for 45 minutes to 1 hour. Rest 5-10 minutes before serving.
