Stuffed Chicken Breast Ingredients

4.0 Chicken Breasts large150.0 gms Mozzarella Cheese cut into strips (10 cm by 1 cm)
50.0 gms Spinach cooked and squeezed50.0 gms Lettuce Leaves (Mixed)
16.0 Sun Dried Tomatoes 0.0 Italian Dressing

Instructions for Stuffed Chicken Breast

Cut a pouch into each breast, taking care not to slice all the way through.

Divide the mozzarella, spinach,. and tomato into four and stuff into each breast.

Coat the breast in olive oil , and season with salt and pepper. In a shallow pan add 1 tsp. of oil. When hot add the chicken breast and colour until golden brown. Place breasts in a baking tray. Bake in a moderate oven, 180 degrees C, for 15 to 20 minutes.

Allow to rest for 10 minutes then slice in half and place on a bed of mixed lettuce leaves. Add dressing to season.
