Braised Beef Short Ribs Ingredients
Ingredients:
6 cups beef
stock
6
beef
short ribs (cut 2" x 2" x 6")
2
bay leaves
3
carrots
, chopped
8 sprigs
thyme
3 yellow
onion
s chopped
1 sprig
sage
6 cloves
garlic
whole
1 sprig
rosemary
2 tablespoons
tomato paste
Grapes

1 ounce
red wine
Salt and
pepper
to taste
Instructions for Braised Beef Short Ribs
Method:
Trim excess fat from ribs. Season with salt and pepper, and dust lightly with flour. Sear in 1 tablespoon hot oil until browned on all sides, then remove ribs from pan.
Continue to heat pan, adding carrots until brown. Remove carrots, then add onions until brown. To the onions, add garlic and tomato paste. Cook for an additional minute, then add wine. Cook 1 more minute, then add stock, bay leaves, herbs, carrots and ribs.
Cover with foil or lid and place into 350?F oven for 3 ? hours or until fork tender. Allow ribs to cool in stock. When cool, remove from stock, trim off bones and strain stock through a fine mesh strainer. Reheat, adjust seasoning and serve.
