In a large mixing bowl, cream butter and sugar. Add the eggs, egg whites, and lemon juice. Mix well. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in blueberries, pineapple, nuts and coconut.
Transfer to two 8x4x2 inch loaf pans coated with non-stick spray. Bake at 350? for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool before removing loaves from pans.
