Boil tripe and retain 1/4 cup of boiling liquid.
Chop tripe finely, can be done in a food processor.
Beat eggs, stir in flour and boiling liquid until smooth, then add chopped tripe.
Heat Oil in a frying pan.
Drop spoonfuls of mixture into hot oil and fry on each side until brown.
Drain on a paper towel and serve hot.
These are good with a brown gravy or even tomato sauce.
